Everybody hears "best music" differently. I've been collecting and curating covers for 20 years. The first 2 entries here do not make it into my collection.

Lot's of different recording by Linda, but  I remember when she first did "Heat Wave".

DeKay

"Lovers in a Dangerous Time" Barenaked Ladies

"With a Little Help From My Friends" Joe Cocker

"Prisoner in Disguise" Linda Ronstadt

"You Really Got Me" Van Halen

"Hurt" Johnny Cash

"Take Me To The River" Levon Helm

"Light My Fire" Jose Feliciano

"Knockin' On Heaven's Door" Guns N' Roses

@upshift - This was a burner in the Sixties on top 40 radio.

Another fave is "Lady Jane" by Rotary Connection

Here's one that sounds so authentic that I can't tell the difference between the real deal and the cover band.

THE SHOW a Tribute to ABBA (youtube.com)

And one of my all time faves, Charles Earland’s cover of "More Today Than Yesterday’ originally by Spiral Staircase.

Recorded by Rudy Van Gelder, reportedly in a single take.

I really like Johnny Cash's Personal Jesus.  I'm not sure it's about the music as much as it is that he's singing Depeche Mode but I always enjoy it.

“Unchained Melody” Righteous Brothers cover of song from the movie “Unchainrd.”

”Love Hurts” Roy Orbison cover of Everly Brothers

”Love Hurts” Nazareth cover of Everly Brothers

”Top of the World” Shonen Knife cover of The Carpenters.

”Just One Look” Klaus Nomi cover of ?

For me a cover adds to the original composition.

If it sounds just like it, that’s a copy period.

"With a Little Help From My Friends" Joe Cocker...

Yup, good one - TONY1954.

DeKay

Smokestack Lightening by the Yardbirds, Burnett (Howlin' Wolf) said it was the definitive version.

Can't help falling In love by Diana Ankudinova. She's a very rare contralto and polyphonic singer To my ears the best female singer currently

To Live is to Fly - Cowboy Junkies

If you can’t tell by now, I’m a Cowboy Junkies Junky. Just got tickets to 4 more April CJ shows this week - can’t wait to hit the road.

Brother Wiley's cover of "First We Take Manhattan" makes it rock out with guitar and electric bass. Qobuz has it. Rock fans, come dig Leonard Cohen in a really accessible way.
