Two 12” subs nothing less. every octave lower requires 4 times the throw or surface area for the same SPL. Your speakers have 100in2 of surface area each and a single 12 has 113”in2. So really even larger would be better…   Anyone who thinks sub...

Yes for sure IMO. But first measure the room with something like REW (it is free, just need a mic). Secondly I would add a highpass filter first before changing subs. 99% of disconnect is frequency related.

You need a dynamic speaker to sound good at low volume. I have only heard the Sabrina on your list. It is ok but low efficacy and probably nothing special at low volume. It was fine when I demoed it but I probably ran it around 90db for the demo. ... 
Basic Budget Bookshelf speakers
JBL 630 at $700 per pair would be in my list. Having heard the older 530s and similar kefs I would guess the JBL is more dynamic top to bottom. Just a guess as I have not heard them but have heard both brands speaker ranges. 60 day trial available... 
How do I know if my systems any good?
Honestly gauge it against a pair of headphones. Headphones are a good gut check to see how your room is too. Headphones have issues too like pad bounce in the cups that cause issue around 2k but most good ones are very good.  
Moving on a sailboat - bookshelf speakers?
I would buy powered speakers with room correction. Genelec or something like the JBL 4329P, and many others.   
horn or line array?
I found the demonstration at the 1:30 mark in this video very interesting.   How the lack of horizontal sound shift of a line source compares to a constant directivity horn is hard to say.   https://youtu.be/8c-gD4mwI8A

Horn/line array combos are what JBL uses in their professional line. The VTX V25 units are what I am thinking of. They stack into a line source but would be comically large for home use and ugly. But honestly they are probably pretty high fidelity...
