Recommend tube meter
the $8 meter from Harbor Freight works great for biasing amps. If you spend more than that for a meter, make sure it has auto range detection, otherwise it's not worth the extra $'s. I picked up a couple of the HF meters for $4 each off of a sale ...

forgive the question, but if you're using a multichannel amp (ie identical amps, identical sensitivity) to bi-amp , why do you need level controls?

too many to name, though maybe someone else has a favorite. I think it depends on what you want to do. TP's suggestion is best. There is a lot of good info, and resources. This can be a real adventure. 
HT bypass with Proceed PAV

if you can open up the amp so you can get to the back side of the RCA jack it may be possible to push it out, depending on the type of RCA jack you have. 
Tone arm slow on the drop
I had this same experience with a RB300. It was very slow to drop, although it wasn't so long it was a big problem. It just seemed abnormally long. I just lived with it, as everything else was fine . . .
