Another Analog v. Digital Thread? Not Really
Apparently in @chayro's world classical music doesn't exist.  Try finding obscure releases of obscure repertoire by obscure composers on vinyl.  And yes, my listening is more repertoire-driven than sound-driven.
New house, new amp, and speaker options (Harbeth, Maggies, GMA or...?)
Err, ~$3K max mentioned in OP.  40.2's would be great, but way out of budget.
Best speakers out there for Midrange and Highs
The Radial midrange in the Harbeth 40.2 can't be beat.  So another one for your list!
A moderate priced dac
@grannyring  Please tell us how you *really* feel about the Orchid.
Any tweaks I'm missing?
Orajel applied to the midrange cones will make your drivers oblivious to the style of music being played through them.

Show me an audiophile and I'll show you a person who's made at least one purchase mistake.

If you could find a used pair of Proac DT8’s that would be ideal, but you might get away with one of the incarnations of the Vandersteen 2 model (buy the most modern version you can afford).
Amplifier Hum - Only Amp Connected
Is there any mechanical low buzz/hum emanating from the amp itself, or is it quiet and hum coming purely from the speakers? It's possible you may have a DC offset issue, or your amp may have an intrinsic transformer hum.  This may be curable by tig...
Which way do I lean...
You'll definitely get some strange dispersion patterns, though it could work.As the Watkins are the clear choice among those 3, why not just get them?P.S. have you looked at Fritz speakers?  And Buchardt?
Krell KAS amplifier hum
You could try the Ebtech HumX, but you might need two.

Are you prepared to buy used, or does it have to be new?If you could find some kind of demo discount deal on the Lintons mentioned above, that would be great.
Classical Music for Aficionados
No love for Bernstein? For a real contrast, you can hear Gershwin himself playing it on "The Essential George Gershwin".
Eh hem!...Subwoofers... What do ya know?
