Streaming: WiFi or wired??
(1) When possible, do wired.   With few exceptions, in most cases wired will do better than wireless.  (2) You haven't mentioned a budget.  If this is your entry into streaming, then a Bluesound Node 2i (retails for $550) is a good place to start....

Given that you like the interface, in your shoes my next step would be to pair the Node 2i with your outboard DAC of choice.  Schiit products are all good value for the dollar.  I have paired the Node 2i with a Chord Qutest, and loved the combo.  ... 
USB/Toslink Adapter???
Can think of 3 which are no longer in production with USB B input and Digital Coax output.  But none with Toslink input or output.Those being the Stello U2, Bryston Buc-1, and the Schiit EITR.

I'd start with ripping the CDs with zero compression.  That means either as uncompressed FLAC files or as WAV files (which by definition are uncompressed).   My preference is FLAC because it provides for better handling of metadata.  For software,...
