The Salon II is anything but simple. More engineering went into that speaker than entire speaker lines from other manufactures.    But yes I agree, a lot of what people spend money on is excess and not really improving the sound much.   
Focal Sopra n1 - mids are a bit recessed compared to Lumina IIs
I would measure your room for starters. REW is free software, you just need a mic.    Recessed mids seems odd for a focal but I have not heard the Sopra1. In general maybe toe them out a bit to knock down the highs which might push the mids more ... 
True high-end Speakers need a midrange
The mid range will make come speakers play louder for sure. Horns are another way to push down the tweeter to under 1000hz effectively without limiting volume as the driver moves a lot less.   
2 sub hook up
You can also use the RCA outs at the same time. Both balanced and RCA are always on. I ran my subs on my benchmark off the RCA and amp balanced, worked fine.   
Which is better, a fussy speaker or a versatile one?
Fussy speakers usually have issue with even dispersion, time alignment, or lack smooth frequency response. I have found all well made speakers that do the things listed above well are easy to setup.

Final speaker… no surly not but I will be keeping my JBL 4367 for a longtime. They have no real flaw and do a lot of things really well. I will happily move up the JBL line when and if I get the chance. I have pivoted more toward my home theater ...

Big speakers, are they really the best way to get great sound?
Yes bigger the better. Bigger is almost always more dynamic and all speaker lack dynamics vs real life. Even with large speakers I like to off load the bass to subs so it can be adjust to the room.
