For the love of...kits?
I like building my own stuff. Very satisfying when it powers up and sounds good. Also easier to upgrade. My amp is from Analog Ethos and I also have an EAR clone. I just got some Fostex full range and am pondering the enclosure build.  
Small factor phono stage
EAR or Hagerman. I haven't heard but maybe Luxman or Zesto.  Also EAT Glo. Tavish Adagio is really good too, but separate power supply.  
2a3 Tubes - Favorites?
Running RCAs. I found that coupling caps make a difference also.  When I changed from the EH/Gold Lions to RCA it was fairly big. After upgrading the coupling caps, I put the EH back and the sound was pretty close.  
Copper vs. Silver tonearm wire
I like bright! My VPI is hardwired at the junction box with DH Labs Pro Studio silver plated copper. I use pure silver in other places and can't really tell the differences from the Pro Studio. Copper though is for sure less bright and warmer.  
Is tube sound vs solid state easier to distinguish using headphones?
Separately it's hard to tell, but back to back it's easy. I've had SS components that sound tube like, except when next to tubes.

@ssg308  my TT isn’t $7000 but my phono stage costs around $5k. IMO, the phono stage the most important component in your vinyl chain.  The signal has to go through it. If your budget is the same as above, the new Darlington Labs MP8B looks goo...

You want to run a $1200 cart through a $150 phono stage. Good luck with that.

Upgrading from a VPI Aries 1- is it worth it?
I would upgrade the phono stage. I use a Modwright PH9.0XT with my Prime.

Like others have said, run up the amp to the noise floor. Let the pre do the rest.
