Help convince me to buy a vintage Mcintosh MC240/MX110z setup!
I'd just buy the MC240 and use your present preamp with it. You might like it better than your SET amp (which are problematic for speaker matching).

Seven 9090B's now on eBay! Prices from $350 to $3200! Most listed at around $1K. Also lots of parts kits to restore and upgrade. 
Cheap cart confession
The Denon 103 mc cartridges are still the best value in the sub-$500 category! Go a but higher and there are the Hana MC's. And the various Grado MI's have long been another good alternative. 
Phono Preamp Tube Rush
It is difficult to build a high-gain phono stage for mc cartridges using tubes. A SUT or a SS head amp (like a Marcof) is the answer (feeding a tube mm stage). 
Dazed & Confused
+1 almarg! Definitely turn down the DAC's volume! Especially since you are using balanced outputs. That's way too much input voltage for the amp (most amps reach full output with about 2 volts!).

Get out the electric drill and some drill bits. Five minutes work! 
Best realistic omni type speaker option?
There is a pair of Ohm Walsh 5's here for sale (black piano finish). I have an older pair of the Sound Cylinders. Room-filling 3-D sound! Better than any ML!!! 
Need a new DAC
Why spend so much? How about the Topping D50 instead? I personally feel that spending big bucks on a DAC is money wasted! Especially since the low cost DACs have achieved such excellent performance! Of course like so many here snob appeal counts f... 
Choosing a cartridge for a vintage TT.
A Denon 103R mc is a good recommendation and a step up in SQ! I added one to my new Pioneer PLX1000 TT. Contrary to the naysayers here Denon has been making excellent and affordable mc cartridges for decades! For $300 the 103R is a "best buy"!

Keep the Plinius! An excellent unit! Changing to an MF is a sideways move at best! Consider a phono cartridge upgrade instead! Maybe a Hana LS?  
Class A 30 Watt Amps: Are they enough to drive my book shelfs?
YES! Doubling the power to 60wpc will only give you 3db more headroom. And if you want an increase of 10db (twice as loud) you will need 300 watts!
