Yes. The phase shift adjustment is, afaik, centered on 80Hz, the nominal crossover but the phase change would be different below that. With a polarity inversion, everything would be 180deg changed.Kal

Depends on your video needs. The Cary will pass the video to your display just fine. However, for non-BluRay materials, i.e., DVD, TV, etc, many people prefer to have a video processor to enhance/optimize video performance. If you are one of these...

It depends on the BluRay authoring. You should be able to choose the HD audio track, even in 2.0. Many of the BRDs I have (mostly opera and ballet, I must admit) have a lossless 2channel PCM track. OTOH, one can convert the 5.1 HD tracks to 2.0/2.... 
What processor?
No. The Cary Cinema 11a will pull off the audio and output the video without further processing. Whether you need an external video processor (as provided with the Cinema 11v) will depend on your video needs. For example, I would not bother.Kal

As Skippybo has said, every pre/pro I know of will do a downmix from multichannels to 2.0 or 2.1 but you would be best off using the dedicated 2 channel tracks contained on almost every disc.Kal
