Beware of the cable claiming long burn in period.
I think, generally speaking, 300 hours of burn-in is the starting point to begin evaluating cables. Most improve further after that, including power cords. Patience is audiophile's virtue. I pay zero attention to how they sound until about 250 hours. 
In listening to your system(s)...what is most crucial to your enjoyment?
Dynamics, pace, rhythm and what folkfreak said. 
When/why to upgrade?

Theoretically, there might be a way - to bring the Gryphon home for audition or to take your speakers to the dealer's room. In reality, maybe not. This is a quite a big decision alright. 
When/why to upgrade?
That's a good question. How high in the amplification and cabling have you gone so far ? I also have 20 years old speakers that keep performing better with each and every upgrade in the chain, no matter how small it is.

nyev, you have a great perception of the sound. This amp/speakers interaction is a complicated thing. I myself like speakers that are slightly loose and give me a somewhat 'bluesy' sound. But this kind of speakers need an amp with a firm grip not ...

I think, you definitely need another audition. One thing about Gryphon you certainly got right. It has a great grip on speakers and you feel the amp's presence. In a manner of speaking, it is quite authoritarian.
