Vandersteen and NOT BI WIRE---Your thoughts
Vandersteen himself recommends bi-wiring, and not bi-amping. For a discussion of the worth and results of bi-wiring dial up the Vandersteen website. The best results are for seperate plus and minus cables which translate to 4 cables for each speak...

Sonus Faber speakers sound nice, but nothing like real music. I can understand why you like them...however, audition all others in your price range so you get the biggest smile for your buck. 
Adding a 2nd center channel?
I don't recommend 2 center channels. 
When is a cart past its prime?
Grado does some things well, and some things not so well. The first to go an an older cartridge is the low end....the suspension stiffens. 
Whatever happened to Audio Physic? Cardeus ?
That's why its important to stick with name brands...Audio Research, Ayre, Vandersteen, VPI, Wilson, etc.,etc.

How Much Difference Does a More Powerful Amp Make?
A better amp is more important than a more powerful amp. Don't be mislead by the numbers game. 
Speakers free of grain, glare and steel?
Speakers produce the end result of all that has come before. If your components are hard, grainy, steely, etc., you would choose a speaker that compensates for that so the end result is listenable. This philosophy is enough to drive us audiophiles... 
Lyra and VPI Scout
It sounds like that Benz left a bad taste in your ears, however, the Ebony LP is one hell of a cartridge. The high output version is wonderful as well if you need the gain. I'm using the LP on a rim drive Superscoutmaster, and the sound is glorious. 
RF Interferenece and hum on tonearm
Replace your cartridge. Grados can work in the right system...evidently you don't have one of those. 
Best Cables for around $500
I am using XLR balanced and find Anti-Cables outstanding. They are very inexpensive, and have a money back guarantee if you don't like them. You really should audition them. 
"Spitting" Cartridge problem
This doesn't sound like a cartridge problem. I'd look upstream..loose cable, bad tube, etc. 
B&W 803D or 804D with ML 335
Listen to all speakers in your price range. To limit yourself to B&W's is to do yourself an injustice. You may very well be looking to do it again in the near future with a B&W product. 
Need a MC Cartridge recomendation...
I know you're not going to take this advice - get your turntable off of the Gingko. If you have VPI minifeet, get rid of them too and get Bearpaws - Vermontaudio.com. You will be amazed at how different your turntable sounds. I felt that the Gingk...
