I find the systems used in most public venues "harsh" and sloppy to my ears-to say the least. True i many cases - although not so at Ronnie Scott's Jazz Club. They have an excellent sound system. 
Widening Soundstage
I'd try to get the listening position a bit further away and free from any reflective surfaces. This might require placing your speakers closer to the wall behind them, which may be challenging for the bass (EQ perhaps or experiment with a sub).

why try to achieve perfect reproduction when it doesn't exist ? Could not agree more. Besides if "reproduction" is imperfect then it simply the best excuse to practice it that much more often! (headaches not withstanding)

Extra long runs of Digital coax?
It is preferable to use optical for longer runs but I suggest you try coax first and see. optical cannot pick up any stray RF/EM noise from equipment. Anyway you'll know pretty soon if it doesn't work as you'll get errors.
