Yes It’s true that precision microphones used to measure frequency response tell you nothing about how speakers sound. Go figure!

Planars are generally not ideal for pop music otherwise take your choice with that budget. I’d be looking at KEF meta or Revel personally were it me.

You can stream in as many systems as you like if each has a streamer input.    
What affects front to back depth in room/ system?
Good Omni directional speakers like mbl do it best but are still limited in most rooms at home unless they can be set up just right to get levels and timing of reflected sound just right.
