One function of the capacitor is to smooth AC ripple voltage on the supply rails, higher capacitance is better, provided its not over-stressing the transformer and rectifier, 10,000uF should be fine but do not go any higher.

You can use the Tape1  and Tape2 "PLAY" as a line level input. For example, connect the CD player output to Tape1 "PLAY" input, switch on the Tape Monitor1 for CD playback, switch it off to select other source. 
Issue with Grace Tonearm
I believe your Grace 560 is a 12" tonearm and the mounting distance is 270mm, make sure your turntable plinth is big enough to mount this arm. I suggest you post your question in Analog section, you will get more response.
