Pure tube phono preamp

ZP3 will work great for you.  It's a virtually EXACT copy of my original CORNET design (long story there), but with an 0A3 added.  For half the price you can get a CORNET3 new, but it doesn't have the fancy chassis.

Something isn't getting a ground.  Use your fingers again.  If touching RCA shields lowers the hum, then you're on the right track.  Is there a power transformer near the tonearm?  What happens if you change MC loading to 47k, does it change to ju...

Yeah, you need to get an Earth ground somewhere in the system.  Touching RCA is a dead giveaway...

Also possible you have no Earth ground anywhere in the system...

You've got magnetic coupling into the phonostage.  Will get worse when you add TT.  Check proximity to a power transformer in another piece of equipment.  You will need to space things out...  
Hum Problem with Grado
I tried that too, connecting ground wire to motor (bearing too).  Didn't do a damn thing... In this case, the problem is magnetic, and you have to deal with it very differently.Nice rule of thumb:  If you hear "buzz", it is electric field coupling...

Phono stage for 0.2mv cartridge?
I can't imagine why you have volume trouble with 70dB gain.  Should be plenty.  Listening with volume control up past 12:00 is also desireable, as this is the lowest distortion region.Hiss?  Well, that could just be the phonostage.  Other ones may... 
Upgrade phono stage?
Your system sounds really nice.  Best upgrade path I would suggest is to switch to an MC cart.  Add SUT (like Bob's Devices) or active head-amp (like a Piccolo2).  Also try some tube dampers (even simple o-rings can make a difference).
