I concur with Alex: the 2.5 was noisy & microphonic, but then so was the 5.5 for that matter. Typical for tubes, but still might be worth a try; some people do like these pre's. 
Turntable Hmmmmm
yes due to the very high gain of phono stages you'll always hear some background thermal noise (hisssssss) but at typical listening levels it's buried well below music signal 
What's the benefit of balanced tonearm cables?
A phono cartridge is by nature of the design a balanced source to begin with. If you're lucky enough to have a phono stage with balanced inputs then by all means do take advantage! The benefit over unbalanced is reduction in hum & noise pickup... 
What does this mean?
well almost right---shields are terminated at the signal-originating end only to prevent ground loops. If terminated at both ends the shielding effect is degraded significantly.

Euro balanced interfaces sometimes use RCA's; 1 cable for inverting & another cable for non-inverting. Take a look at an Electrocompaniet component for an example of this approach. 
Balance control vs. Speaker placement
Brian have you swapped around your source component interconnects so as to reverese Left & Right channels at various points along the signal path? You might have a marginal connection or cable, or even a component that's not within balance.
