DAC variable output

Using the DAC fixed output, my preamp volume rarely increases past 10 o'clock. Is it advisable to use the variable output from the DAC to control gain to the preamp?

Depends. Some digital gear has a digital volume control that starts dropping data to control volume. Most of the time you are better off running through the preamp. The best systems always have a quality preamp, just saying.
