Yes, the digital signal in AES/EBU format provided on XLR jacks is electrically balanced. In my experience, a balanced transport feeding a balanced DAC will probably sound superior utilizing the balanced XLR digital connection, rather than the single-ended S/PDIF connection on RCA's, and assuming the cables under test are comparable in quality and character.
