What a fun thread!

Nanci Griffith has two albums of covers, with great musicians. 

Other Voices, Other Rooms from 1993.

Other Voices Too (A Trip to Bountiful) from 1998.

The ongoing lyrics thread in this forum made me think of two covers of It's All Over Now Baby Blue that I really like.

Gal Costa covered it in Brazilian, and Bonnie Raitt did a nice cover for a compilation disc; I think it may have been on the sound track for Steal This Movie.
