I agree that the best approach is to keep a new, or tested NOS, set of tubes to put into the amp for comparison purposes.  At some point, the tubes have to be changed, so it makes sense to buy the set now.  You could get "lucky" if the set you buy...

I take it you have two phono  inputs into the McIntosh, one for MM and another for MC so that you can easily switch between the two using a selector. The McIntosh would be providing part of the gain and the equalization for both inputs, so the MM ...

I thought that the two cartridges have comparable outputs, so they can be switched without any need for more gain when using one instead of the other.  Why would you need an additional SUT or amplification stage?

I find it interesting that so many audiophiles, particularly those who favor high-powered amps, measure quality by how loud an amp will play.  For me, the measure is just the opposite--how soft can an amp play and still deliver satisfying sound.
