Win Laboratories Phono Preamp Value???
Bluebook on the Jewel preamp 1985 is $250 retail; about half that wholesale...Don't know if that corresponds to your prepre. From the description it sounds like it should be in the $100 - $150 ballpark. 
What cables should I get?
I've used the Homegrown Silver Lace interconnects with good results using the same pre and similar AES amps. I'm using Coincident CST speaker cables which aren't bright at all.

Try DH Labs digital and interconnect cables. Will be an inexpensive fix. Lots of choices on speaker cables... 
AES3 any thoughts
The DJH signature version is a big step up, especially with NOS tubes. The stock version doesn't match the quality of your existing gear. Talk to someone at Cary about the 88 or 2002 preamp.

Paradigm Reference 40 or 60 would be great. One of the best values for the $$ and a big step above the regular Paradigm speakers. The 40 is selling on Audiogon now.

True about the Aerial Acoustic, but may not be the easiest speakers to drive as they like power. Try the Soliloquy line, frequently seen on Audiogon. Nice finish work as well. solspeak.com.

Try an integrated like the Musical Fidelity A3. About $850 at Upscale Audio. Best cd player for the money is Cambridge Audio 500 SE. For interconnects try harmonic tech; speaker cables try analysis plus.
