It seems that B&W does not target a flat response, instead going for a "smile" response.  Up to you if that offends your sensibilities. Also, steer clear of the yellow Kevlar midrange BW uses.  I could swear that thing is in break up mode thro...

Vandersteen Quattro CT:  http://vandersteen.com/products/quatro-wood-ctHeard these recently at Johnny Rutan's place hooked up to Audio Research tube amps.  They sounded fantastic.  Really right bass and open, spacious top end.    
XLR Question
Stupid question, but are you sure that assigned the XLR input to the source you are selecting?  Some of those fancy AVPs allow you to assign any physical input to a source.

I suspect there will be a synergy between the Aerial and the Ayre, but at this level your dealer should have no problem letting you take both home to demo in your room.  Then you can tell us which one you think sounded better.  :)  Enjoy and good ... 
Is there any advantage to lower efficiency speakers? 87 or below?
I would be surprised to learn that designer would, keeping all things equal, purposefully forgo efficiency to arrive at an 87 db or lower sensitivity.  In other words, designing a speaker that has 90 db efficiency and then padding it down strikes ... 
Vandersteen 2Ci - Bi-wire cable question
Well, the mesh is not designed to removed.  But it would be fairly easy to do it; there are videos on YouTube re driver replacement that show you how.  But the speaker is not really "finished" underneath the mesh...so I don't think it would look g...

I believe that the 2s have an active 8" and active 10".  Agree that bi-wiring is definitely worth a try, even if it means moving the amp into the room just for the experiment.  My 3A Sigs are bi wired, but never tried them otherwise..... 
Where to begin when choosing new setup??
Ask around here for a local dealer and listen to as many different systems as possible.  Figure out what tickles you.  Wish I could give you a more specific answer, but I also wouldn't presume to tell you what flavor of ice cream you'd like best. ...
