The Blue Jeans Belden speaker cables are great and cheap. I've switched them out of my system a couple of times for more expensive cables only to bring them back in and sell the more expensive ones. Their locking bananas are also very nice.

I'm using a signal cable magicpower cable on my Duet (same line as the Quintet, but smaller). You can pick one up used around here for $40. It works, but I didn't notice any difference in sound with the magicpower vs. the stock cord. 
Extending phono ground cable
Yes, I have done this with success. Just use any piece of wire you have lying around--it won't affect the sound. Extending the RCA's would be a different story. You probably don't want 10 feet of cable between your tonearm and phono pre.

I've always been happy with my Signal Cables. I used to use their Silver Resolution phono cable on my Scout until I bought a new phono stage and all of the sudden started getting RFI interference. Swapping that cable out for VPI's phono cable made...

Low Cost Turntable
I would also recommend the Rega. It's a good simple table with a lot of options for inexpensive future upgrades. But I'm sure you'd also be happy with the base model. As a former Music Hall MMF-5 owner, I think the Rega arm is the dealbreaker.
