Best amp for Avalon Eidolon speakers?
The Atma-Sphere MA-2's are a good match with the Eidolon's here. Excellent control, extremely quick, with beautifully natural timbre and harmonic overtones on acoustic music. 
Best performances of Handel's "Water music"?
As noted, Pinnock/English Consort and McGegan/Philharmonia Baroque Orchestra. The Pinnock continues to be my favorite performance (alert, alive and with rhythmic vitality); the McGegan is very very good and in superior sound. 
Favorite Concierto de Aranjuez Version?
Another excellent performance is the Argenta/Yepes performance on London/Decca. My copy is an LP, London STS 15199. I also agree with Frap's suggestion of the Marriner/Romeros performance on Philips. Both are excellent and characterful performances.
