Expense, Pain in the a-- factor, Availability of recordings. Expense. Service & Support. Expense... but if you’ve really got the HiFi bug, they are the pinnacle. 
Y-split vs separate cables
If you double the speakers on one set of outputs, you halve the impedance. Not a huge deal as long as your amp is stable.

Koetsu Urushi opinions?
I have listened to an Urushi (gold flake) as well as a Rosewood Sig. for 15 years or so. The Urushi is a definite step up in resolution over the Rosewood series. Personally, I would bypass the more expensive Rosewood carts and jump to the Urushis....
