Please Define: High vs low output moving coil
The concept is that if there are fewer windings on the (moving) coil attached to the cantilever, then it is lighter and more sensitive. The price being lower output. As well as HOMCs, there are also low output MCs and very low output MCs.

Phono stage as preamp
If there is a volume control, there must be a buffer otherwise the output impedance would vary with output level. So its not really a phono stage you're using but a phono preamp.

No. In fact, it’s the digital source that is at "fault" here -being too loud after a short travel of the volume control. It's all good!
