Constant noisy tubes maybe go solid state?
It’s a preamp. No power tubes. Just swap in the other 12A*7 tubes. Nothing’s going to blow up as they all have the same pin configuration and heater current.Edit: @rodman -snap!

Is the drive formatted for Mac? If it's formatted with NTFS, OS X is unable to write to it.

Measuring TT Speed
If the belt is too tight, it may be causing the motor bearing to wobble by applying a bias to one side. Try backing off on the motor mounting screws if possible. 
How to choose step up transformers?
Not sure if using a low-end MC is worth all the connections and lossy wiring over a good MM. Especially in your setup. Compare an Audio Technica VM760 with the MC configuration.  
Solid State Phono Preamp Suggestions $3k-$4k
PS Audio Stellar got a rave review recently in Stereophile if that's anything to go by. They don't use chips/op-amps but discreet transistors. Apparently the "best midrange at any price" according to Fremer.

Second @douglas_schroeder . I've heard the Golden Ear Triton a few times and they were so dull, the guy demoing was blaming everything except the speaker because he couldn't accept a transducer could be so bad.
