I would highly recommend the PrimaLuna line - I use a Dialogue 2 myself. I prefer it with EL34's rather than the KT88s. 
Rega RP3 Bias/Anti-Skate
My experience is also similar to Viridian's. I would not, however, try adjusting it on the fly, but that's just me. Viridian has much more technical expertise than I.

Mac question
Ejlif is correct - you have to go through iTunes on a Mac. You can use a different program to burn a CD of stuff you like (I use a program called Burn), but iTunes has to see it first before you can do anything else with it.
