300w tube amp monos - which one?
Buy a secondhand pair of McIntosh 275's and parallel the outputs of each amp. This will give you 150 watts per side - only a 3db difference from 300 watts!  
Can VTL 2.5 do MC cartridge?
Even with an added tube to get gain up to around 60db+ there will still be noise inherent from tubes. A better solution is to use an SUT (Step Up Transformer). These add zero noise to a MM stage but handle the current-to-voltage conversion needed ...

I'd stick with the Cayin and Luxman amps. Adequate power - and plenty of tube "magic" - contrary to what some claim! Plus enough in reserve to handle music peaks on your 87db speakers!  
What amp to pair with a Hafler DH-110 Preamp?
How about a nicely restored Hafler 220 amp? Plenty of power and quite transparent sounding too! BTW, I have the 110/220 pair in my collection! Plus the Snell E's!

Vintage Altec and JBL have a particular synergy with 60's and 70's Rock! That's why I own them!
