How important is the transport when using a DAC?
Very much a function of the overall architecture. With reclocking and asynchronous DACs, the difference are definitely a lot smaller then with a traditional synchronous architecture. It is still a bit of a mystery to me why a transport would make ... 
Best way to hook my new iMac to my PS audio PWDAC2
Your best bet sonically is to get the bridge, and just run JRiver on the Mac (now finally available) as your DLNA server. You would control you library trough eLyric. Works like a charm (at least on PC - presume JRiver on Mac is stable as well).

To be on the safe side I would stay away from EMM, and buy a copy of JRiver instead. Many users are having issues with EMM response times. You could be lucky and never have an issues, but it is not as robust as JRiver.

I believe a netbook has no disc drive. You will need a drive to rip CDs. Get a laptop. Best to check computeraudiophile for advice on computer/storage/networking hardware in an music system application.

In the interest of full disclosure. There have been reports of reasonably intelligent people with basic computer skills, throwing in the towel in despair trying to get the bridge to work (I personally know one). There is some element of randomness...

Depending on what level sound quality you are aiming for your best bet may be to look at a turnkey server with build in DAC, such as Olive, unless you don't mind spinning discs. 
SACD vs Regular CD's
I have a bunch of Blu Rays, SACDs and DVD-A. They can all sound anywhere ranging from crap to stellar, mainly a function of the recording / mix quality, not so much the format.

Are you looking at a multichannel or two channel application? Second, are you planning to use the analog outs or as HDMI transport into a processor?

SACD vs Regular CD's
The gap with CD narrows substantially as playback hardware gets better. For me the beauty of SACD is mainly in the (unfortunatey rare) multi channel releases, not so much the lead in SQ over CD on two channel. 
Metrum Octave and 192khz?
From what I understand the dac chip in the metronome processes at 48/24 (when asked, the manufacturer does not deny this - just silence), so for high Rez, this may not be your dac.
