I would look at Arcam, B & K, and Rotel Receivers. In that order. You may have to forgo HDMI switching (I find it useless any way, as I only have two video sources. One is Component and the other is HDMI)

Denon 2910 video quality
I had the 2910 and now the 3910. I think they're close but, I think the 3910 does a slightly better job. With video that is. Having said that, I could be happy with either, if video were my only concern. 
My Jolida 100 skips even on new cds. How to fix?
When I had a Jolida it would play a dog frisbee. I mean the worst, most beat up, scratched up terd of a CD, would play just fine.....and it sounded great too!Based on my experience I say somethings amiss, probably a dirty PU or a sluggish assembly...

I just looked on the back of the AVR-200 I am currently using and it has a 5.1 input (only one though).

Easy Arcam AVR-200, sounds great, and its at the low end of your budget ~$600.00 used. I cant remeber if it has 5.1 inputs for DVD-A /SACD (i think it does) I only use SACD and in 2 channel only. 
What is the best $1000 CD Player?
My vote ....Resolution Audio CD-55, probably at least 1200.00 though =( 
HT system with Best Possible Redbook perfornance
For Best Redbook 2 channel, I would chose Arcam over B & K (its way smoother to my ear) and I wouldn't bother with a universal player (unless it was modded unit). For the source I would opt for a decent used CDP ($600 to $800) and buy a cheape... 
Prepro for B&W/Krell combo?
A good Pre/Pro will vastly improve your sound. I would recommend a Bryston but the XLR-in requierment kills that. It's easily my favorite and I prefer it strongly. I hate to sell mine but life has demanded I simplify. I dont recall if the EAD 8800...
