Tubes can also be low noise without the gold pins. From everything that I have read and from my own personal experience, gold pins do not offer any sonic advantage. However, they are more resistant to corrosion.
historically the gold pins were the premium offerings - meaning longer life and more importantly lower noise. most NOS tube hounds will happily pay a premium for the gold pins, no questions asked.
