My favorite is the Danny Carey's off time solo in Tool's 46&2. Also good is the solo on track 6 of Frank Zappa's Roxy and Elsewhere. Most anything by Mike Portnoy (Dream Theater, Liquid Tension Experiment) is essentially a drum solo as well.
