Looking for a softer tube
You might try a 6211 if you can find them. It's a lower gain 12AT7. I'm also with the Mullard guys as far as finding them to be warm. 
great 70s country lps...audophile grade
Haggard has always been very picky about his recordings and I suspect his stuff is well done. I have so very few country albums that I'm not sure. Another artist that I would look for is Don Williams. Everything I have of his is very well recorded. 
Bad Tube? Which one?
Can you isolate the problem to one side or the other? If so, move the output tubes to the other channel and see if the problem moves with the tubes. You can do the same for the small signal tubes if needed.

I see no reason to be concerned unless you have a large room and like to crank up the volume. That's a real honey of an amp, btw. But, I'm real partial to EL84 valves.

PSB are gear and music friendly. If your musical tastes are more specific, I'd reconsider. But, if you need a speaker that can sound good across the board of musical genres and are budget limited, they are easy to live with.

Pro Ject Tube Box Replacing Tubes Help
From the photo, I suspect you need an Allen wrench to remove the long bolts from the tube protectors. Once removed, you can easily pull the tubes out by hand and replace. Gently rock the tube and never force it in or out.
