SACD is VERY confusing
+1 on the PS Audio explanation. I use the hdmi from a Sony BluRay player (x1000es)  into a Moon 390 and it decodes at DSD (when available) and sounds pretty swell. (You have to fiddle a bit with the x1000) But... how many DACs, let alone preamps...

LP Thickness/Taper
Theo has it. LPs were thicker at the edge and at the label so the lps didn't scratch each other when they dropped from a changer onto the spinning disc below. I had a Garrard SL95, Dual 1219 and a trusty Benjamin Miracord 50H. Amazing machines. A... 
MM Phono Stages With Greater Than 40 dB of Gain?
Moon 110LPv2 Up to 66db gain both mc and mm. I have the same circuit in a Moon 390 and I like it. Worth a look.

Help me choose an Audio Research preamp/line stage (Please?)
Having owned the SP8 and 9, my thoughts. SP8 is complex and wonderful. I still have one. Retubing is no (economic) joke, however. On the SP9 you will want the MkIII. Cleaner all around. I had my MkI upgraded to III and really appreciated the diff... 
Can you have too much speaker presence?
50+ years an audiophile. I've never heard "presence" used in this way. Usually refers to upper mix frequencies. It would be interesting to know what your dealers means. And I'm not saying he doesn't know what he's talking about,  just that he's us... 
Is my HDMI audio out really an i2s connection?
Try it! Have fun. But... it is not i2s. I run hdmi from my 1100 to a Moon 390 hdmi in and get 176k from SACDs. I like the sound.  Good luck.
