When did you know that music was your passion?
The summer of 1966 when I fell in love. Donovan's "Sunshine Superman" and The Association's "Cherish" along with several others from that year still has an magical effect. 
best CD player or DAC under $1000
My latest choice would be the Jas Musik tube CD player. The unit uses a single 12AX7 and is one of the best sounding CD players I've heard in this price range. 
steps ahead
It's amazing how this 1983 album sounds like it might have just come out yesterday; really great progressive jazz; I especially like the second song "Islands". The N.Y.C. album that came out in 1989 is probably my all time favorite though. 
Cowboy Junkies: Lay It Down fav cd?
I hate to say it but I find them to be a bit laid back and boring. 
Speaker suggestions
I love my Alon Lotus Elites which are no longer made; the Nola Viper IIA are very similar though. These speakers do everything right in my opinion. 
What is the story with Rega Appolo?
You might want to check out the Jas Musik tube CD player; it uses a single 12AX7 and a rectifier tube. I had the Rega Apollo for awhile but the Jas, in my opinion, completely outperforms it, especially after upgrading the Sovtek 12AX7 to a NOS Amp... 
12AX7 vs 12AT7
I wouldn't do it; each tube is different electrically; the 12AX7 has higher gain but the 12AT7 has higher current. 
Best value speakers available
The Boston Acoustics VR3. They are considered mid-fi but you should hear them properly set up and positioned with decent electonics. 
Best Cartridges for the Money You've Experienced
I'm no expert on cartridges but I really like the Ortofon X5 on my Pro-ject RM5 table.

Who is your favorite jazz pianist
I have always liked Phil DeGreg and Johnny O'Neal. Although they are not well known they are superb jazz pianists. 
Name a couple of HOLY GRAIL LPs
Cat Steven's "Tea for the Tillerman" has always been a favorite of mine. Also Dave Brubeck's "Take Five" LP. 
5 tables one choice, opinions please
I've had experience with all the tables you listed and would choose the Pro-ject 9.1 hands down. The VPI Scout would be my second choice. 
Onkyo a-9555 digital amp vs. Jolida 302b tubes
I've had both and like the Onkyo the best. The Onkyo is faster and more detailed whereas the the Jolida is a bit too sluggish and laid back for my tastes.
