Palo santos or koetsu rosewood signature

This cart will be going on a Project Signature 10 TT.  They are close in price with routine dealer discount. I prefer full bodied sound and not too analytical. I have an SME 20/12 with urushi black and love that rig but also have another project rig and I love the sumiko pear wood celebration. All suggestions would be appreciated. Thanks!!
