I am not sure I understand the question and above replies. I believe (correct me if I am wrong) Jaidog will be using a Blu-ray player (DVD players can't decode Dolby TrueHD or DTS-HD Master Audio) and have the Blu-ray player pass the decoded 5.1, or 7.1, signal to his Theta Casanova processor (which cant handle Dolby TrueHD or DTS-HD Master Audio via HDMI). Is this correct? So, you want to know how to get the Casanova to handle the 5.1 or 7.1 decoded analog channels?
If I have got this right, I will be very interested to see what the board members have to say about this task. I have exactly the same problem with my Pioneer Elite Blu-ray player (which can decode Dolby TrueHD and DTS-HD Master Audio to analog) and Krell HTS 7.1 which cant do the decoding, but, can handle a 5.1 or 7.1 analog input.
