A-Bluetooth can sound good but the technology has some limits.
B-I'm yet to hear noise cancelling headphones that can compete with "regular" headphones.
C-Google Play Music has it's own limitations. If you really want to step it up try some better software. This was always bottom of the barrel to me. Windows Media player was always better. JRiver is well worth the $50 to get more out of music.
Finally, you are torn between itunes and a Galaxy. Itunes can sound good but I do not care for it. Android can be much more flexible and less invasive with licensing and download.
