Ei 12ax7 elite gold tube sound quality

I just purchased a matched pair of Ei 12ax7 elite gold tubes for my Jolida cdp. I listen to a variety of music types from jazz to indy bands. My system include B&K st-202 amp and pro 10mc pre-amp with Alon II speakers. These are a smooth plate design. What sound quality differences are there from the flat plate design?
