Analog-to-Digital Converters, Microphones & iPods

Can anyone recommend an analog-to-digital converter and microphone combination for an iPod? Or, is there a high quality microphone that performs that task in a single device? I realize that inexpensive microphones for iPods abound, but are they any good?
